Today I got a little ambitious and decided to make something from our spoiling bananas. I had a recipe for Banana Muffins that I found online (to whoever started it, THANK YOU!! unfortunately don't have the name to give original credit), but I decided to alter it a little, and make Banana Bread and it came out AWESOME. So I thought I would share.
You Will Need::
3 or 4 bananas -- 4 large makes it really moist -- today I used 3 medium and 1/8th a teaspoon of artificial banana flavouring and it worked just as good, but was not as moist-- which for bread was better I think
2/3 cup granulated sugar
1 egg
1/3 cup melted unsalted butter
1 teaspoon of baking soda
1 teaspoon of baking powder
1/2 teaspoon of salt
1 1/2 cups of all purpose flour
Directions::
Mix the mashed bananas, egg and butter together in a large bowl and then set aside. In a smaller bowl mix your baking soda, baking powder, sugar, salt, and flour. Slowly add the dry ingredients into the wet and stir till combined. Do not over mix, just make sure all is blended evenly. Batter should be a little lumpy because of the bananas. Pour the mixture into a well sprayed bread pan (I prefer glass) and bake in a 350 degree F oven for about 30-40 minutes, depending upon the oven. Mine took about 37 minutes, and was a little moist in the middle a few minutes before then -- so I put it back in for a bit.
You could always add other things to it like nuts, chocolate chips, etc.
